The Restaurants We Book
La Grande Table Marocaine at Royal Mansour: Morocco's most formal restaurant — and possibly its finest. Executive chef Mohamed Boussetta's menu is a study in fassi haute cuisine. Service by uniformed staff trained in France. Chandelier-lit dining room hand-crafted by Royal Mansour artisans. Reservations for non-hotel guests are possible, but require advance relationship.
Le Marocain at La Mamounia: The Mamounia's flagship Moroccan dining room, set in an Art Deco room opening onto the famous gardens. Live music most evenings. The bastilla is the best in the city.
Dar Moha: Mohamed Fedal's pioneering restaurant in a restored 1930s riad. The menu reinvents Moroccan cuisine — Nouvelle fassi cooking that remains authentic. Lunch by the pool, dinner in the courtyard.
Le Jardin: Medina garden restaurant — a concept that shouldn't work in a historic medina but does, entirely. Open-air under a century-old fig tree canopy.
Al Fassia: The finest traditional restaurant run entirely by Moroccan women. Lamb mechoui, chicken with preserved lemon, couscous on Fridays. No tourists-menu compromises.
Nomad: The best rooftop in the medina, above the spice souk, with Atlas Mountain views. Contemporary Moroccan small plates, natural wines, excellent service.
